Differences in catechins and phenolic acids may be related to the dying time and the quantity of tea leaves in the drying patterns because they presented a decreasing trend of FFGT > CarFGT > RFGT and were even correlated with the shape of tea leaves because of the apparent increase in CalFGT compared with other heat-conduction patterns. 3.2.3 Flavonols Flavonols and their glycosides accounted for approximately 3–4% of the weight of dried tea leaves.
