From Figure 6 a,b, it can be seen that the viscosity of all the oleogel samples, except the sample stabilized by 0.5% WPI alone, showed a decreasing trend with time when the shear rate was constant, indicating that the change in sample viscosity was not only related to the shear rate but also to the shear time.
