In this study, KEGG functional difference analysis based on functional annotation showed that, compared to the refrigerated raw milk, the refrigerated pasteurized milk had extremely significant positive statistical differences in metabolic pathways such as secondary metabolite biosynthesis, carbon metabolism, alanine, aspartic acid, and glutamic acid metabolism (amino acid metabolism), and glyoxylate and dicarboxylate metabolism (carbohydrate metabolism) ( p < 0.001) ( Figure 5 ).
