Results Nutrient content As shown in Table 1 , there were highly significant differences ( P < 0.01) in the content of total carbohydrates, crude polysaccharides, proteins, ash, energy, moisture, lipid, total amino acids, and individual amino acids, including phenylalanine, alanine, proline, glycine, glutamic acid, arginine, lysine, tyrosine, leucine, serine, threonine, aspartic acid, isoleucine, histidine, and valine, among the three types of Chinese yam.
