ANOVA was performed at the berry level ( n = 24) followed by Tukey's HSD test (p ≤ 0.05) and determined soapberry (23.21 mg/g) had higher levels (p ≤ 0.05) of arabinose than black huckleberry (5.48 mg/g), which may be significant for diabetes control as arabinose has been shown to slow down glucose absorption by inhibiting the intestinal enzyme sucrase, which is critical for hydrolyzing sucrose into glucose and fructose molecules.
