The antioxidant efficiency values showed an increasing trend with higher antioxidant concentrations, where A.E. for l -ascorbic acid increased from 10.85 ± 0.58 (10 μM) to 13.81 ± 0.90 (40 μM) and for α-tocopherol from 10.35 ± 0.50 (10 μM) to 14.10 ± 0.95 (40 μM) in 1% ZNP emulsions.
