The inhibitory activities of GCG and EGCG towards •R and •OR showed a time dependence, the highest efficiencies of GCG and EGCG towards •R as well as GCG towards •OR were occurring at 20 min (180 °C), with the rate of 69.64 ± 0.27 %, 60.06 ± 0.38 %, 68.40 ± 0.82 %, respectively, with respect to the inhibition rate of GCG and EGCG towards •R and •OR, it showed a decreasing trend with the extension of heating time ( Fig. 3 ), this was attributable to the thermal acceleration of lipid oxidation chain reactions, where the rate of radical generation surpassed the antioxidant capacity for consumption and regeneration.
