This would imply a curious structural transformation from a soft but dense structured pellicle, to a more diffuse pellicle after exposure to SDS and STP; which may be significant given that structural changes in the salivary pellicle have been reported to be an important factor when trying to understand mouthfeel changes observed in people consuming foods that interact with pellicle proteins (Rossetti et al. 2008 ; Gibbins & Carpenter 2013 ).
