Slight amounts of water may accumulate on the surface of hydrophilic edible films using the cup method, and the resistance of the stagnant air layer between the bottom side of the film and the surface of the saturated salt may be significant, and, if neglected, may underestimate the water vapor transmission rate ( WVTR ) [ 18 , 46 ].
