The crude protein in gonad and male muscle, moisture in female muscle, and crude lipid in male muscle increased significantly from FW to SW and AW ( p < 0.05), whereas a decreasing trend was detected by crude protein in female muscle from FW to SW and AW ( p < 0.05).
A slightly increasing trend of ∑TSV in males and ∑TBV in females was detected from FW to SW and AW.
No significant differences existed between the freeze-dried female gonad and male carapace among the three treatments ( Figure 2 B,C) ( p > 0.05), but the a * and b * values of freeze-dried male carapace still showed an increasing trend of fattening in SW and AW.
