Conversely, the peak areas of TF1, TF2A, and TF2B showed a trend of rising first and then decreasing during the fermentation process, particularly that of TF1, which reached its maximum level at 8 h and subsequently declined significantly; this may suggest that TF3 may be metabolized by the gut microbiota into TF1, TF2A, and TF2B.
