With the increasing amount of chloroacetic acid, the substitution degree of CM-GMRPs showed a trend of first increasing and then decreasing, which may be due to the fact that too little chloroacetic acid produced fewer carboxymethyl groups, resulting in poor derivatization effect; too much chloroacetic acid would promote the occurrence of side reactions and change the alkaline environment of the solution, resulting in a decrease in the carboxymethylation reaction rate [31] .
