Fasting blood glucose decreased modestly in both groups (approximately 15–25 mg/dL), but changes did not reach statistical significance, whereas total cholesterol, LDL-cholesterol, and triglycerides fell significantly and to a similar extent in both arms, consistent with a high-fiber, low-GI effect in which the specific contribution of tempeh is difficult to isolate.
