If the FADS locus does indeed account for as much as 10% of the total phenotypic variation in plasma AA levels in African Americans and as high as 39% in European Americans, as seen in our study, then the implications for a transition to a diet enriched in LA and AA (i.e., a Western diet) and the consequent impact on inflammation through AAs capacity to be converted to potent bioactive products [ 6 - 8 ] might be quite significant.
