A clear trend toward increasing furosine concentrations with increasing temperature and time of treatment was noted, although the amount of furosine found in raw milk differed significantly from the amount found in HTST-treated DHM at 70°C for 15, 20 and 25 and at 72°C for 15 and 25 s (Table 3 ).
