The lack of a clear trend in [6]-shogaol content with increasing age of the sample was consistent with previous research by our laboratory ( Johnson et al., 2020d ), which found no significant increase in [6]-shogaol with aging, but rather suggested that the equilibrium point for the dehydration of [6]-gingerol into [6]-shogaol may be dependent upon the drying conditions, rather than on the [6]-gingerol concentration.
